Safranbolu Food and Drink Recommendations
I don't know where to start when it comes to describing Safranbolu's pastries, because they are all so delicious. But I think it's best to start with peruhi. It is shaped like a triangle, filled with cheese, covered with plenty of butter, and sprinkled with dried mint and a little chili pepper. It’s a different take on the mantı we know, but it’s delicious. You can find it in almost every restaurant in the Old Bazaar.
Speaking of mantı, I can’t skip mentioning the Greek mantı at İmren Lokum Konak. After boiling the mantı, it’s sautéed in a pan with diced meat and butter. It’s different but very tasty, so I recommend trying it.
Walnut-stuffed keşli yayım is another must-try. Yayım is like homemade noodles. Keş is a cheese-like substance made from dried yogurt. Combined with plenty of walnuts and butter, it gives you that authentic “village table” feel.
If you love gözleme, Bestami Gözleme in the Old Bazaar will satisfy your cravings. You can also go to Fincan Cafe across the street and have a slice of su böreği, maybe some more yayın or peruhi, and you'll be completely full.
There's also haluşka. It's one of Safranbolu's lesser-known but locally beloved dishes. Flour is thrown into boiling water and stirred constantly with a wooden spoon. It seems simple, but getting the consistency right is difficult. There is a “twist” on top of all of them, which I think overshadows the others. Minced meat mixed with spinach or chard is wrapped in leavened dough. Yogurt and oil are spread on top and it is baked in a stone oven. The best place to eat it is at Kadıoğlu Şehzade Konakları. If it's made by Hayri Usta, you'll be in for a treat. It's perfect for breakfast, lunch, or dinner.
Another specialty at Kadıoğlu Şehzade is kuyu kebab. The whole lamb is cleaned and hung in a pit with a hook, where it cooks for hours.
Meat-stuffed grape leaves, vegetable stew, and bandırma made with boiled chicken are also common dishes in the region. Okra and long beans are particularly popular here. In winter, they are also prepared using the dried versions.
